Bacon Avocado Egg Salad

 Ingredients:  
4 hard boiled eggs, chopped  
¼ medium avocado, mashed 
1 tablespoon avocado oil mayo 
2 slices bacon, cooked and chopped 
2 romaine lettuce chutes 
sea salt & pepper, to taste 

 Ingredients:  
1. In a small bowl combine eggs, avocado, mayo, salt, and pepper. Mix until thoroughly combined. 
2. Divide mixture between lettuce chutes, sprinkle with bacon and enjoy immediately!  

Makes 1 serving  
Nutrition Information: 540 calories, 42g fat, 6g carbs (3g net carbs), 33g protein
