2/3 cup + 2 tablespoons shredded cheddar cheese
6 ounces boneless skinless chicken thighs, cooked & chopped
½ cup guacamole
1/3 cup shredded lettuce
2 tablespoons sliced olives
2 tablespoons sour cream
2 tablespoons diced bell pepper
1. Preheat oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper. Pour 1/3 cup cheese into two piles on lined sheet, spread in a circular shape. Bake in preheated oven for 5-7 minutes until melted and crisp.
2. Allow cheese to cool enough to handle and remove from sheet. Allow to sit and harden a few more minutes.
3. Spread ¼ cup of guacamole on each cheese “tostada”, sprinkle with shredded lettuce and top with cooked chicken thighs. Top with remaining ingredients.
