Loaded Cauliflower Salad

Ingredients:
6 cups cauliflower, chopped  
4 slices bacon, cooked and crumbled
1/3 cup paleo mayonnaise  
1 tablespoon mustard
¼ cup red onion, diced  
½ teaspoon dill
1 tablespoon chives, chopped
1 teaspoon vinegar
1/3 cup shredded cheddar cheese
sea salt & pepper, to taste
paprika, to taste  

Instructions:  
1. Steam cauliflower until just soft, careful to not overcook. About 3-5 minutes. Once done add to a large bowl and allow to cool about 10 minutes.  
2. Combine all ingredients in bowl and toss until well coated. Garnish with additional chives and chill for 1-2 hours prior to serving. Enjoy!
