Sausage Breakfast Casserole

1 lb. pork breakfast sausage, cooked and crumbled
6 slices bacon, cooked and crumbled
½ cup onion, diced
1 cup diced mushrooms
2 cups spinach, chopped
8 large eggs
1/2 cup unsweetened almond milk
½ cup shredded cheddar cheese
3 oz. goat cheese
Salt and pepper to taste
1. Preheat oven to 350 degrees Fahrenheit.
2. In a bowl whisk together eggs, almond milk, and salt and pepper to taste.
3. In a 13×9 baking dish spread cooked breakfast sausage, bacon, followed by the diced onions, mushrooms, and spinach. Pour the whisked milk and egg mixture over vegetables and sausage. Lastly, sprinkle goat cheese and cheddar cheese on top.
4. Bake in preheated oven for 30-35 minutes until cooked through and eggs no longer jiggle.
5. Serve warm and enjoy!
